National Pancake Day…. Ooey Gooey Pancakes!

Happy Shrove Tuesday! Or as it’s better known, National Pancake Day. In our house, we have one child who LOVES pancakes and one who can leave them.

However, we have a secret weapon for the one who can leave them. She is a marshmallow fan and we have combined the two, marshmallows and pancakes to make an ooey- gooey treat! Marshmallow Pancakes! (The one who is obsessed with pancakes doesn’t like these at all!!)

Here’s what we do (and it’s easy!):

1. Make your favorite pancake batter (someday we’ll share Great Grandpa O’Brien’s Buttermilk Pancake recipe)

2. Put batter on the griddle

3. Stud the pancake with mini marshmallows

4. Flip once that pancake is ready

5. Remove the pancake from the pan. “Hole” side should be up on the plate.

6. Fill the “hole” with more marshmallows.

The marshmallows melt leaving cavities and the pancake is sweet and tender. We love these with just a pat of butter!
